What makes a Mead?
As wine comes from fermenting grapes, and beer is fermented grain, mead comes from fermenting honey and is thought to predate both!
Why should I try mead?
Mead- at its best - is a local product. Since the ingredients are primarily honey, water, and yeast - the quality of each determines the end product. A mead made with local Tennessee honey will taste unique compared to other locales due to where the bees are foraging. Additionally, meads made with a spring honey (which is typically lighter and more floral) will taste different than one made with a late fall honey (which is darker and more robust). As a brewer, this gives one a tremendous opportunity to play with flavors that highlight that unique moment in place and time.
Why Skeptic?
It comes from a sneaky play on words! Whenever I tell folks what I’m making, there’s the inevitable skeptical look moments before they try it. But as any beekeeper will tell you, a Skep is also the name for the handwoven beehives of old!
